Passover Wine Cake

This is a delicious cake that is almost foolproof.  It generally rises so much that it runs over in the oven, but I always consider that a mark of success with this kind of cake!

I make it every Passover, and serve it with strawberries or simply by itself.

Matzo Meal Sponge Roll

The following recipe has become a family tradition at our Seders. My mother, may her name be a blessing, always served this and after she was gone, either, my brother, sister or I prepare this, even if we can't be together, we prepare it to take to the Seder to which we will be going. Raspberry Chocolate Meringue Icebox Cake

This is delicious and spectacular looking!  Don't put it together too far ahead of time or the meringue will weep and it won't look as nice.

"Graham Cracker" Crust

Use this mock graham cracker crust the same way you'd use a real graham cracker crust. Sticky fillings that will hold the crumbs in place work well, as do chocolate or cheese fillings. The unbaked crust mixture can be refrigerated for 1 week or frozen for 3 months. The baked crust can be refrigerated for 2 days.
