Ingredients

  • 8 matzos
  • broken into 8 pieces
  • 9 large eggs
  • beaten with 1/4 tsp. salt
  • 4 cups granny smith apples
  • peeled
  • cut into quarters
  • then cut each piece into quarters again
  • 1/2 cup raisins
  • 2 sticks margarine
  • melted in 9x13 baking dish
  • 3/4 cup sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/3 cup slivered almonds
  • toasted lightly

Directions

    Put matzo in hot water for about 20 seconds to soften but not made soggy (do in batches). In a large bowl add all ingredients except matzo and mix well. Then add matzo and pour into greased baking dish. Sprinkle a very little cinnamon over the top. Bake at 350° for 40 minutes. Can be done ahead and reheated.
